The desire for sugar is innate
A large proportion of our common foods are sweetened. This is mainly due to the fact that humans have a special preference for sweets, which is even innate. The preference for sweet tastes develops in the womb. The aversion to sour or bitter tastes serves as self-protection: a bitter or sour taste indicates poisonous or unripe food. Our brain immediately recognizes a sweet taste as a safe source of energy.
The basics of sugar
Sugar is a by-product of photosynthesis. This refers to the process in which plants form sugar from water and carbon dioxide with the help of sunlight. It is stored by them either directly or converted into starch, and the classic sources of sugar are sugar beet and sugar cane. Household sugar is finally obtained by pressing the plant sap and through further processing steps such as thickening, crystallization and cleaning.
Sugar as fuel for muscles and brain
Sugar is a carbohydrate. These make up a large part of our diet and are important sources of energy. Carbohydrates are divided into mono-, di- and polysaccharides, depending on how many individual building blocks they are made up of.
- Monosaccharides (simple sugars): These include glucose (dextrose) and fructose (fruit sugar). During digestion, the monosaccharides are absorbed without further breakdown and enter the bloodstream directly.
- Disaccharides (disaccharides): These include, for example, the milk sugar lactose and the malt sugar maltose. Simple household sugar (sucrose) is also a disaccharide. During digestion, they are broken down into their individual components by enzymes in the small intestine and then absorbed by the body.
- Polysaccharides (polysaccharides): Polysaccharides consist of long molecular chains, which is why they take longer to digest. The longer the molecular chain, the less sweet it tastes. The best-known polysaccharide is starch, which causes blood sugar levels to rise slowly and thus serves as an important source of energy.
Sweeteners: giving up sugar does not mean giving up sweets
On average, every German citizen consumes 37 kg of sugar per year, which corresponds to around 100 g per day. This amount exceeds the recommended sugar intake for a healthy diet by a factor of two. If you want to consume less sugar, you can use sweeteners or sugar substitutes as an alternative; sweeteners have a higher sweetening power than sugar and contain hardly any calories. Sugar substitutes are also sweeteners. Sugar alcohols are metabolized independently of insulin. This means that they do not increase blood sugar levels and are therefore particularly attractive for diabetics. In addition, unlike conventional sugars, sugar alcohols do not promote tooth decay.
