Sweet, sour, bitter and nutty - the world of food flavourings
Around 15% of all foods in Germany are flavoured. Of these, no less than 70% have a natural origin. Both natural and chemically produced flavors give the food a new taste, intensify the existing taste or replace it completely. Contrary to some preconceptions, most flavors are natural and only serve to enhance the taste. In many cases,
flavors are even essential for food in order to preserve it for a long time.create culinary delicacies by using flavorings for refinement. Important flavors are often lost or significantly reduced during cooking and baking. Thanks to flavors, you can easily restore or enhance them. Despite perfect preparation, inharmonious notes or off-flavors can sometimes arise. These can be avoided just as easily: Find suitable nuances, round off your dishes, add completely new flavors or ensure a controlled taste - right to the end.Fruit and vegetables in particular lose significant characteristic flavor notes during cooking or are generally rather tasteless due to the season. For this reason, flavorings are often added as ingredients during cooking. This is the only way to guarantee a consistent taste throughout the year for products such as ketchup or tomato sauce.
Food colorings for the eye
As we all know, the eye always eats too. For this reason, the focus during food preparation is not just on taste. The colors and what we associate with them are at least as important: Strong yellow cake has a lemon aroma, while dark brown cake is particularly chocolaty.
Colorings for food have the elementary task of providing this color support and making the food, such as confectionery, more appetizing to the eye. Children in particular are fascinated by bright and vibrant colors, which are identified by food additive numbers. The colorings are E100 to E180 and, as with flavors, there are numerous natural colorings. They are extracted from plants. The same substance can have different colorings due to differences in concentration, environment or combination with other colorings. Chlorophyll, carotenoids, anthocyanins and flavonols are the four color subgroups that can be obtained from plants.riboflavin (E101), brilliant blue (E 133), caramel (E 150) and calcium carbonate (E 170) are just some of the food additives that you can use in your products. However, not all additives can be used without restriction for every food. There are clear guidelines here. If you need advice,
