Natural & sustainable

Natural casings

Natural casings are the classic casing for artisan sausage products. Whether of animal origin or algae-based, they are renewable and sustainable and give the flavour of your products the right bite.

Pelle all? No problem!

Our range of natural casings includes pork and cattle casings as well as sheep casings. In addition to animal casings, we also offer a vegan variant to provide non-meat eaters with the option of eating vegetarian and vegan sausages. The so-called alginate casings consist of the salts of alginic acid, which is formed by brown algae and bacteria. The gelatinous casing surrounds the sausage meat during the machine-made sausage production process and hardens immediately.

What can the vegan casings be used for? Alginate casings are suitable for fresh, dried, cooked and smoked dry sausage products. Have you already tried the sustainable and environmentally conscious alginate casings? If not, it's worth considering. Algae are considered a renewable resource and are therefore abundant in nature.

Do you already know our production accelerator? With our tubed sheep casings, your sausage production will be much easier and more efficient in future! You receive our sheep casings ready to fill in a practical butcher's bag. The short set-up time and easy handling are an indicator of reliable and profitable production. We supply more sheep casings and offer you great deals with attractive special prices.

Recommendation for use: The casings must be rinsed out beforehand and soaked for 30 minutes at a water temperature of approx. 38 °C. Then simply pull the tubed sheep casings over the filling tube so that the tube can be pulled out in the next step. Then it's time to fill with the sausage meat and you're done!

The sheep casing as an all-rounder

Natural casings from sheep are considered a small all-rounder for various sausage products. The advantage: it can be eaten without hesitation. The sheep casing is particularly tender and is ideal for cooked sausages such as Vienna or Frankfurt sausages. Rostbrat and smoked sausages are also made with sheep casing. The sheep casings should be stored away from light and in a cool place between +4 °C and +8 °C. To make them more pliable and make them easier to fill, it is recommended to rinse the casings in cold water before use to remove the brine. They should then be stored in cold water for 6-12 hours and soaked again in plenty of warm water for 30-45 minutes before filling. Try our sheep casings!

Synthetic casings offer a number of advantages: they can be filled more evenly and more aesthetically than natural casings. They also do not spoil as quickly.

Clean thing

Cleaning

In addition to compliance with cold chains, work protection and hygiene regulations, cleaning plays a central role in meat and sausage production. It contributes significantly to the shelf life and freshness of the food.

Thorough cleaning is the be-all and end-all

Germ contamination can be minimised with the correct use of cleaning agents and disinfectants, thereby avoiding contamination of the meat products. The mild cleaners are also characterised by their good skin compatibility and are not as flammable as conventional cleaners.

Brushes are used to simplify the cleaning of surfaces, appliances and floor coverings. You will also find brooms and dustpans for cleaning floors. Dirt or used hygiene paper can be disposed of in appropriate waste bags. Swab tests can be used to identify possible bacteria. Samples are taken using a swab, which is then analysed using colour cards or other methods. Small incubators are also available to quickly obtain results on possible bacterial contamination.

Disinfect correctly

In some cases, cleaning with conventional agents is not enough. Disinfectants for smooth surfaces are then used.
