Deep-frying – the appeal of a culinary art
Deep-frying is a cooking method in which food is cooked whilst floating in hot frying fat or oil. Deep-frying results in a crisp outer layer and, ideally, a succulent centre. Typically, the food is completely submerged in oil heated to around 170°C. This produces a unique texture and intensity of flavour that is difficult to achieve using other cooking methods. Why is that? Here are a few reasons:
Maillard reaction: This term refers to a chemical reaction that occurs between amino acids and reducing sugars during cooking. The Maillard reaction takes place particularly at high temperatures, such as those reached during deep-frying. As a result, the food being deep-fried develops a rich palette of flavours and its flavour intensity is significantly enhanced.
Caramelisation: As with the Barbecuing The sugar contained in the food caramelises further when it is added to the hot fat. This produces sweet and complex flavors that complement the natural flavor profiles of the ingredients.
Enhancing aroma and flavour: As some of the water contained in food evaporates quickly during deep-frying, flavors can come through more clearly. In addition, Fats and oils should not be underestimated as excellent flavour enhancers.
Texture: Crispy on the outside, juicy on the inside. The crispy coating that forms quickly acts as a sort of seal around the food. This ensures that deep-fried food is usually crispy on the outside and beautifully juicy on the inside.
It all starts with choosing the right oil
The oil is a crucial factor in successful deep-frying. To ensure that the result meets your expectations and that the oil remains stable at high temperatures, there are a number of factors to bear in mind:
smoke point: This refers to the temperature at which fats and oils begin to smoke and break down. When this happens, harmful substances such as acrylamide are formed. Frying fats and oils with a high smoke point should therefore be used for deep-frying. Good frying oils have a smoke point of around 200°C.
Stability: Heat stability depends largely on the chemical structure. Oils rich in saturated fatty acids are particularly stable – their saturation makes them more resistant to oxidation. Unsaturated oils are more commonly used in cold dishes. Refined cooking oils are also particularly suitable for deep-frying, as the refining process has made them more heat-resistant.
Neutral taste: To prevent fried foods from tasting of the oil or frying fat used, you should opt for flavourless options. Neutral oils such as refined sunflower, rapeseed or peanut oil are ideal for deep-frying for a number of reasons. And not least because they do not mask the natural flavour of the food.
As well as choosing the right oil or frying fat, precise temperature control is also crucial. If the oil is too hot, the food will burn – if it is too cold, it will have to remain in the oil for a long time to cook properly and will therefore soak up too much of it. There are therefore a number of factors to bear in mind, not only regarding the right oil and fat, but also in terms of the equipment.
The equipment for perfect deep-frying results
The equipment you use for deep-frying can have a significant impact on the result. If you want the food to be completely submerged in the oil, you’ll need not only a high-quality deep-fat fryer but also a suitable thermometer. You’ll also need heat-resistant tongs or ladles, as well as a draining rack or some other way of catching the excess fat. At the Ehlert GmbH shop, you can find a comprehensive range of high-quality equipment for all your deep-frying needs!
Tips and tricks for deep-frying:
Anyone interested in frying food to perfection can also benefit from a few other basic tips and tricks:
Dryness of food: Oil splattering can be avoided if the food to be deep-fried is dry. Floured or breaded items should be left for long enough to allow the coating to set.
Preheating oils and fats: If you wait to add the food until the oil has reached the correct temperature, you prevent it from being left in the oil for too long and thus from absorbing too much fat – which makes it unnecessarily greasy and heavy.
Do not overfill the deep-fat fryer: Adding large quantities can lower the oil temperature, resulting in unevenly cooked and greasy food. It is therefore advisable to fry in small batches.
Checking the cooking time: Naturally, the required cooking time in the oil varies depending on what you are cooking. It is important to monitor the cooking time to ensure the food is cooked through without being overcooked.
Cleaning and maintenance of the equipment: To ensure the purity of flavour and to comply with important hygiene and safety requirements, the frying oil should be filtered and replaced regularly. Thorough cleaning and regular maintenance must also be carried out.
Seasoning after deep-frying: To ensure that spices and salts retain their full flavour, it is advisable to add them only after baking.
Breading: For a particularly appetising crust, it’s time to get started on the Breading
